Boiled Chocolate Cake
This is a very rich and moist cake, easy to make and excellent for any occasion. Make sure that you grease and line your cake pan as the cake does tend to stick to the pan.
1 cup SR Flour
125g butter
1 cup sugar
1/3 teaspoon bi-carb soda (baking soda)
2 1/2 tablespoons cocoa
2 eggs
2/3 cup water
In a large saucepan bring to boil sugar, water, cocoa, butter and soda. Simmer 5 minutes and cool. Add beaten eggs to the cooled mixture (don’t be tempted to add them before the mixture has cooled – you’ll cook them) and fold in sifted SR flour. Pour into a greased and lined cake pan and bake for 40 minutes at 160°C.
Ice with chocolate icing.
