Best Blueberry Muffins
125g butter, at room temperature
3/4 cup sugar
2 large eggs
1 tsp vanilla essence
2 tsp baking powder
1/4 tsp salt
2 cups plain flour
1/2 cup milk
1/2 cup blueberries
1/4 cup walnuts or pecans, chopped
1. Preheat the oven to moderately hot 190C. Grease 12 1/2-cup muffin tins.
2. Using an electric mixer, beat the butter until creamy. Add the sugar and continue beating until pale and fluffy. Beat in eggs, one at a time. Then beat in vanilla, baking powder and salt.
3. Fold in half the flour with a wooden spoon, then half the milk. Add remaining flour and milk. Gently fold in blueberries and nuts.
4. Spoon batter into muffin tins. Bake in the preheated oven for 25-30 minutes or until golden brown. Remove from tins and allow to cool to room temperature on a wire rack.
