Beef Shanks with Gravy
Serves 6
1 kg beef shanks cut in thick slices
1 onion
2 carrots
2 sticks celery
4 peppercorns
2 whole cloves
2 tablespoons brown sugar
2 tablespoons vinegar
1 1/2 cups water
salt
3 tablespoons tomato paste
3 tablespoons flour
2 tablespoons water
Peel and thinly slice onion, carrots, slice celery. Place in cooker with peppercorns, cloves, brown sugar, vinegar, water, salt and tomato paste, stirring well. Add beef shanks, being sure to cover with tomato mixture. Cover and cook on low for 8 to 12 hours.
Combine flour and water to make a paste and stir in to contents of cooker. Turn on to high setting, cover and cook for 15 minutes or until gravy has thickened.
