Beef Sausages with Onion Gravy
2 tablespoon olive oil
12 thin beef sausages
1 brown onion, thinly sliced
1 tablespoon thyme leaves
1 tablespoon plain flour
1 cup Continental Beef stock
1. Heat 1 tablespoon oil in a non-stick frying pan over medium heat. Cook sausages, in batches, for 8 to 10 minutes or until cooked through. Transfer to a plate and cover to keep warm.
2. Add remaining oil to pan. Add onion, thyme and salt and pepper. Cook for 15 to 20 minutes or until onion is soft.
3. Stir flour into onion mixture and cook for 1 minute. Slowly add stock, stirring constantly until gravy comes to the boil. Simmer gently for 2 to 3 minutes or until thickened slightly.
4. Place sausages on plates, spoon over onion gravy and season with pepper. Serve.
