Beef Macaroni
600g mince
3/4 cup grated carrot
3/4 cup grated zucchini
1 small onion finely diced
1/2 cup frozen peas
1 can tomato soup
2 tsp chicken stock powder
2 Tbsp tomato paste
3 cups macaroni noodles
Sauce:
1 Tbsp marg
3 Tbsp flour
1 1/2 cups skim milk
3/4 cup grated cheese
Cook mince in a large saucepan. Drain off then return to pot. Add carrot, zucchini, onion, peas and soup to pot. Cook for 2 mins stirring continually. Add stock and tomato paste. Cook 5 mins, stirring. Fold in noodles and mix together well. Pour mixture into a baking dish.
Sauce:
Melt marg in a saucepan. Add flour and cook for 1 min while stirring. Slowly add milk and whisk until boiling. Pour over meat and sprinkle cheese.
Bake for 25 – 30 minutes.
