Barley and Vegetable Chunky Soup
1 leek chopped
1 onion diced
1 carrot diced
1 zucchini diced
2 sticks of celery chopped
1/2 cup diced pumpkin
1/4 cup barley (pre boiled for 30 mins)
approx 800ml of vegetable or chicken stock
2 tablespoons of tomato paste
1 tablespoon of parsley
Combine all ingredients except for the zucchini. Bring to the boil, then simmer for about 10 minutes, then add the zucchini, and simmer for another 10 mins or until all the vegies are cooked. If needed add more stock. Tastes great with warm bread or toast.
