Barbecue Glaze Meatloaf
500g bacon, trimmed
1 onion, chopped
1 clove garlic, crushed
750g beef mince
250g sausage mince
1 cup fresh breadcrumbs
1/2 cup parsley, chopped
2 tablespoons rosemary leaves
1 tablespoon Worcestershire sauce
sea salt and cracked black pepper
Barbecue Glaze:
1/3 cup tomato sauce
2 tablespoons brown sugar
2 tablespoons red-wine vinegar
Preheat the oven to 180°C. To make the barbecue glaze, place the sauce, sugar and vinegar in a small saucepan over low heat and stir until sugar is dissolved. For the meatloaf, brush the glaze over both sides of the bacon, reserving any remaining glaze. Line a 20 x 10 x 7cm greased loaf tin with the bacon. Place the onion, garlic, beef mince, sausage mince, breadcrumbs, parsley, rosemary, Worcestershire sauce, salt and pepper in a bowl and mix to combine. Press the mince mixture into the loaf tin, fold over the bacon to enclose the filling, and cook for 35 minutes or until cooked through. Carefully drain any excess liquid from the tin and turn the meatloaf out onto a. baking tray. Brush the loaf with remaining glaze and cook for a further 8-10 minutes or until the top is golden. Slice to serve.

Omg this is absolutely devine and sooo yummy mmmm thumbs up to this for sure oh and i only used about 500g mince
