Banana Sour Cream Cake
1/2 cup butter
2 cup sugar
4 eggs
3 cup sifted flour
1 tsp soda
1 cup sour cream
1 tsp vanilla
4 ripe bananas, mashed
1/2 cup chopped nuts
1 cup confectioners’ sugar
Juice of 2 lemons
Cream shortening and sugar in bowl. Add the eggs and mix well. Mix the flour and soda. Add to the creamed mixture alternately with sour cream. Stir in the vanilla and fold in the bananas and nuts. Place in tube pan. Bake at 350 degrees for 1 hour or until done.
Mix confectioners’ sugar and lemon juice and drizzle over cake. Place a ring of thinly sliced bananas dipped in lemon juice in a circle around cake, if desired.
