Banana Coconut Slice

Banana Coconut Slice

200g plain biscuits crushed
1/2 tsp ground ginger
125g butter melted
1 banana sliced to serve.

Filling:
650ml full cream milk
2 x 85g pkts vanilla instant pudding mix
2 med bananas
2 tbsp lemon juice
1/4 cup coconut toasted.

Line 20 cm x 30cm tin with non-stick paper overlapping sides. Put biscuits, ginger and butter in bowl and stir until mixed. Press mixture into tin and put in fridge while preparing filling.

Filling: Pour milk into medium bowl and sprinkle with pudding mix Beat on medium speed with mixer 2 minutes. Cut bananas into small pieces. Pout lemon juice over them and drain. Fold banana through pudding mix. Pour filling over biscuit crust and sprinkle with coconut. Put in fridge until set, then decorate with extra banana and coconut. Cut into slices.
