Banana Cake
1/2 cup butter or margarine
1/2 cup sugar
1 teaspoon vanilla essence
2 eggs
3 medium size bananas (mashed)
1 teaspoon bicarbonate of soda
1 tablespoon milk
1 1/2 cups Self raising flour
Pre-heat oven 180 C (350 F) gas or electric. Beat butter, sugar and vanilla together until creamy. Gradually beat in eggs, and add mashed bananas. Mix milk and bicarbonate of soda together and fold into banana mixture with sifted flour. Pour batter into a greased and floured 20cm (8″0 deep sided cake pan and bake 45 – 50 minutes.
