Baked Ham with Sticky Glaze
Serving size: Serves 10 or more
1 x leg ham
whole cloves
1 cup brown sugar
2 teaspoons dried mustard
60ml cider vinegar
60ml maple syrup
Prepare leg ham by cutting through the skin around the shank in a nice pattern.
Using your fingers carefully peel the skin back from the ham. Continue using your hands to push the skin gently away from the fat. This method ensures that you do not cut away too much fat and also leaves you with a beautifully smooth ham.
Using a small sharp knife, score the ham fat in a diamond pattern. Take care not to score down to the flesh or the fat will slide off once you start baking the ham.
Stud the diamonds with cloves.
Combine the brown sugar, dried mustard, cider vinegar and maple syrup in a bowl and mix well to make the glaze. Brush all over the ham.
Bake in wood-fired oven or oven pre-heated to 230°C (210°C fan-forced) for about 30 minutes, brushing often with the glaze, until the outside of the ham has turned a beautiful golden brown colour.
When glaze is baked as desired remove from oven and either carve and eat warm or allow to cool to room temperature and serve.
