Baked Butternut Pumpkin
1 medium butternut pumpkin
2 tablespoons margarine
1/2 cup fresh orange juice
pinch of ground cinnamon
Preheat oven to 175C or 350F.
Cut the pumpkin in half and scoop out the seeds, scraping clean. Place the pumpkin in a baking dish and ‘dot’ each half with the margarine. Pour Orange Juice and sprinkle cinnamon over pumpkin. Bake uncovered for 30 to 45 mins until soft. Slice each half into 3 portions and serve.
