Baked Bananas in Foil
4 ripe bananas, peeled
1/4 cup water
3 tablespoons sugar
1/2 cup apricot preserves
Level 1/4 teaspoon almond extract
2 vanilla beans, split lengthwise
4 pieces aluminium foil, 20cm x 30cm
1. Preheat the oven to 220 C.
2. Bring the water to a boil in the saucepan and stir in the sugar until dissolved. Remove from the heat, add the apricot preserves and almond extract and whisk to combine thoroughly.
3. Fold the sheets of foil in 2 lengthwise and crimp the ends closed to make a pocket or boat shape. Put a banana inside each pocket, pour 3 tablespoons of apricot sauce over each and add half a vanilla bean. Crimp the top side of the foil to close the packets securely.
4. Place the bananas on a baking sheet and bake in the oven for 15 – 20 minutes, depending on the size of your bananas. Remove and serve in the unopened foil.
