Bacon and Onion Dip
1 tablespoon olive oil
6 rindless rashers bacon, chopped finely
1 large onion, chopped finely
1/2 cup sour cream
1 cup cream cheese, softened
2 tablespoons fresh chives, finely chopped
Salt and pepper to taste
Heat olive oil in a saucepan, fry bacon and onion until bacon is browned and onion softened. Combine sour cream and cream cheese in a food processor and blend well. Fold through bacon, onion, chives and seasoning. Serve with protein style dippers. You can also whisk an extra 1/2 cup of olive oil through this dip to use it as a dressing on mixed lettuce.
