Asian Frittata
1 Tbsp oil
3 minced spring onions
2 tsp freshly grated ginger
2 cloves garlic, minced
1 cup diced red capsicum
4 eggs
8 egg whites
2 Tbsp soy sauce
1 cup bean sprouts
1 cup snow peas, trimmed and halved
1 Tbsp sesame seeds
Preheat oven to 175C.
Using an oven proof pan, on medium heat, heat oil and then add the onion ginger and garlic. Sauté 1-2 mins. Add capsicum and sauté for 3 mins.
In medium bowl, mix eggs and soy, then add to pan. Cook for 8 – 10 mins until eggs are set on bottom.
Place sprouts and peas over eggs. Sprinkle with sesame seeds and bake in oven until top is set. Watch carefully that eggs are just cooked or they will become tough. Place under grill for 30 secs to brown top. Cut into 6 wedges.
