Apple pie with a Difference
125g butter slightly softened
1 cup caster sugar
1 teaspoon vanilla essence
1 egg
1/2 teaspoon bicarbonate soda dissolved in 1 tablespoon white vinegar
2 cups self-raising flour
1 cup desiccated coconut
800g can pie apple
1. Cream butter and sugar together until light and fluffy. Add vanilla and egg. Beat until combined. Stir in soda mixture.
2. Fold in sifted flour and coconut. Mix well. Place dough on a lightly floured surface. Roll or press out to a large round, about 1cm thick.
3. Ease pastry into a 23cm pie dish. Trim edges. Reserve the trimmed pieces. Spoon apple into case. Crumble reserved dough over the apples.
4. Bake in a moderate oven 180C for 40 to 45 minutes or until golden. Serve hot with ice-cream or cream.
