Apple Bran Muffins
2/3 cup milk
2 teaspoons vinegar
1 cup shreds of wheat bran cereal
2 eggs beaten
2 tablespoons vegetable oil
1/4 cup sugar
1/2 cup all purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup peeled finely chopped apple
1 teaspoon wheat germ toasted
Combine milk and vinegar in a mixing bowl, let stand one minute. Add cereal, let stand five minutes. Beat in egg and oil; stir in sugar. Combine flour, cinnamon and soda; add to cereal mixture, stir just until moistened. Fold in apple. Spoon batter into paper lined microwave muffin cups, filling 2/3 full. Sprinkle with 1/4 teaspoon wheat germ. Microwave on high 2- 3 minutes, rotating once. Let muffins cook in pan one minute; serve immediately. Repeat procedure with remaining batter.
