Apple and Strawberry Crumble
2 Tbsp reduced-fat margarine, plus extra to grease
3 cooking apples (such as Granny Smiths) peeled, cored, sliced
2 Tbsp pure floral honey*
250g strawberries, hulled, halved
1 cup (100g) rolled oats
2 Tbsp soft brown sugar
1/2 tsp ground cinnamon
1. Preheat the oven to 200°C. Lightly grease a 1-litre (4-cup) ovenproof dish with the extra margarine.
2. Put the apple, honey and 2 tablespoons water in a saucepan and bring to the boil. Reduce the heat to low, then cover and simmer for 3-4 minutes until the apples have softened a little. Remove from the heat and stir in the strawberries. Spoon the mixture into the prepared dish.
3. Put the oats in a food processor and process until mixture is coarse. Combine oats in a bowl with sugar, cinnamon and margarine. Spoon evenly over fruit. Bake for 15-20 minutes until crumble is crisp and golden. Serve with low-fat vanilla ice cream or custard, if desired.
* Australian pure floral honeys, such as yellowbox and red gum, have a lower GI.
