Anzac Slice
400g Anzac biscuits
1/2 cup desiccated coconut
75g butter, melted
1/2 cup condensed milk
1 1/4 cups icing sugar
2 Tbsp passionfruit pulp
Process Anzac biscuits in a food processor in several batches until they are finely crumbed. Transfer biscuit crumbs to a large bowl. Stir in coconut, butter and condensed milk, mixing until well combined. Press the mixture firmly into a 20cm x 30cm lamington pan. Refrigerate several hours or until firm. Sift icing sugar into a heat-resistant bowl then stir in enough passionfruit pulp to make a firm paste. Place bowl over a pan of simmering water or microwave on HIGH for about 30 seconds until icing is warm and spreadable. Quickly spread icing over slice base, using a fork to make a pattern, if desired. Return slice to refrigerator until icing is set. Cut into squares to serve.
Makes 24 pieces
Slice will keep for several days stored in an airtight container in the refrigerator.
