Anzac Biscuits
1 cup coconut
1 cup plain flour
1/2 cup butter
1 level tsp bi-carb soda
2 cups rolled oats
1 cup sugar
2 Tbsp golden syrup
2 Tbsp boiling water
Mix dry ingredients.
Melt butter and syrup together in a small saucepan.
Dissolve soda in boiling water. Add to melted butter.
Stir butter into dry ingredients to a firm consistency.
Place teaspoonfuls of mixture onto trays. Allow room for spreading.
Cook until golden.
Allow to cool on trays.
Note: The cooking time varies depending on if you want them crunchy or soft.
