Almond Cakes
200g blanched almonds
200g plain flour, sifted
250g caster sugar
1 teaspoon cinnamon
a little orange flower water
grated rind 1 lemon, 1 orange, 1 tangerine
Honey and extra almonds
Lightly toast the almonds, grind coarse and mix with flour, sugar, cinnamon, rinds and a little orange flower water. Add just enough water to make a stiff dough. Knead lightly until well amalgamated and shape into ovals, approx. 17.5cm long, 5cm wide and 2cm thick. Place on a greased and floured baking trays and bake at 190°C for about 20 minutes. While still hot, spread with honey and press on the almonds.
