Passionfruit Butter
8 passionfruit
50 grams butter
250 grams sugar
3 eggs, well beaten
2 lemons, juice of
1 tablespoon water
Combine all ingredients and cook gently in a double saucepan or bowl over hot water until thick. Do not allow it to boil.
Bottle and seal, keep in fridge when opened.
Like all butters, the keeping time is limited.
