Quick and Easy Mocha Fruitcake
1kg mixed dried fruit
2 cups strong black coffee
150g fruit and nut chocolate roughly chopped
2 cups SR flour
Soak the fruit overnight in the coffee.
Preheat the oven to 180C. Grease and line a 20cm x 28cm tin.
Mix together the fruit mixture, the chocolate and the flour. Spoon into prepared tin. Bake in the oven until cooked through (between 1 and 2 hours).
