Quick Coffee and Walnut Cake
1 1/2 cups SR flour
2T cornflour
1 cup dark brown sugar
125g butter
1/2 cup very strong black coffee (2 heaped tsp instant + water)
2 eggs
3/4 cup chopped pecans or walnuts
Preheat oven to 180C/350F. Grease and flour 23cm square tin. Put all ingredients in food processor and whiz until smooth. Pour in tin and bake 30 mins. Cool and cut in half. Sandwich with coffee butter cream and top with coffee icing.
