Strawberry Glazed Cheesecakes
150g plain sweet biscuit crumbs
80 g butter melted
250g cream cheese
300ml sour cream
1/4 cup sugar
3 eggs
2 tsp grated lemon rind
2 tsp lemon juice
250 g strawberries, halved
1/4 cup strawberry jam
Grease 4 x 1 1/4 cup (300ml) oven proof dishes. Combine crumbs and butter, divide and press over bases of the dishes.
Put 250g cream cheese, sour cream, sugar, eggs, grated lemon rind, lemon juice in food processor and whiz till smooth.
Pour over bases. Bake @ 180 degrees for about 25 minutes or until just set. Refrigerate a few hours until firm.
Decorate cheesecakes with strawberries brushed with jam.
