Chinese Fortune Cookies
Makes about 30.
Store up to two days in an air-tight container.
3 egg whites
50g icing sugar, sifted
40g unsalted butter, melted
50g plain flour
written fortunes
1. Preheat the oven to 180°C. Line a baking tray with baking paper. Draw three 8cm circles on the paper.
2. Place the egg whites in a medium sized bowl and whisk until just frothy. Add the icing sugar and butter and stir until smooth. Add the flour, mix until smooth and set aside for 15 minutes. Using a flat-bladed knife, spread 1 1/2 teaspoons of the mixture over each circle. Bake for about 5 minutes, until the edges are light brown.
3. Working quickly, remove the circles from the tray by sliding a flat-bladed knife under each one. Place a written fortune message in each cookie.
4. Fold in half, then in half again over a blunt object. Allow to cool on a wire rack. Cook the remaining mixture the same way.
Tip:
Make cookies two or three at a time, otherwise they will harden too quickly and break when folding.
