Spicy Tomato Relish
750g ripe tomatoes, chopped
1 large brown onion, chopped
1 cup caster sugar
1 cup malt vinegar
1 Tbsp plain flour
2 tsp curry powder
2 tsp dry mustard
2 tsp salt
1/4 tsp chilli powder or to taste
1/2 tsp ground ginger
# Combine tomatoes, onion, sugar and vinegar in a suitable sized pot. Bring to the boil and simmer, stirring frequently for about 40 minutes or until mixture is reduced and thickened slightly. If you want it smoother use a stick blender.
# Combine the rest of the ingredients in a small bowl, add 1 1/2 Tbsp water to make a thick paste.
# Stir into the tomato mixture stirring to combine. Simmer, stirring for 2 – 3 minutes until thickens.
# Cool slightly, (will thicken up more as it cools) pour into warm sterilised jars and seal when cool.
Makes about 2 1/2 cups.
