Apple Cinnamon Cake
6 – 7 Granny Smith apples
3 tsp cinnamon
4 Tbsp sugar
2 3/4 cups flour, sifted
3 tsp baking powder
1 tsp salt
3/4 cup vegetable oil
1 1/2 cup sugar
1/4 cup apple juice
2 1/2 tsp vanilla
4 eggs
1/2 cup pecans, chopped
1. Preheat oven to 170 C. Grease a tube pan.
2. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.
3. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, apple juice, sugar, vanilla and eggs. Mix wet ingredients into the dry ones until well mixed.
4. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top then sprinkle with pecans. Bake for about 1 1/2 hours, or until a tester comes out clean.
