Chocolate-Flecked Frozen Christmas Pudding
Serves 12
1/2 cup sultanas
1/2 cup currants
1/2 cup chopped raisins
1/4 cup finely chopped dessert figs
1/4 cup brandy
1 piece glace apricot, chopped
1 piece glace pineapple, chopped
1 piece glace pear, chopped
1 piece glace peach, chopped
1/2 cup glace cherries, chopped (optional)
1 litre good-quality vanilla ice-cream, softened
50g dark chocolate, chopped
1/2 cup cream
1/2 cup flaked almonds, toasted
Seasonal berries and fruits to serve
Combine sultanas, currants, raisins and figs. Add brandy, cover and soak for 12-24 hours, stirring occasionally. Mix soaked fruits with glace fruits, ice-cream, chocolate, cream and almonds. Spoon the mixture into a mould or bowl lined with plastic wrap. Smooth surface and cover with overhanging sides of food wrap. Freeze until firm.
Serving Suggestion:
Turn onto a chilled serving plate and surround with seasonal berries and fruits.
