Chocolate Chip Cookies
100g milk chocolate, cut into chunks
50g white sugar
70g brown sugar
120g softened butter
1 tsp vanilla essence
140g flour
1/2 tsp bicarbonate of soda (baking soda)
1 egg, beaten
Mix the softened butter with the sugars until pale and fluffy. Separately, mix the flour with the bicarbonate of soda. Beat the egg into the butter-sugar mixture, add the vanilla. Combine with the flour to make a softish dough. Mix in the chocolate (or nuts or dried berries). Place flattened balls of the mix on a greased sheet and put into a preheated oven (180C) for about ten minutes. They spread, so don’t put the cookies too close together or you’ll end up with one big one.
