Flourless Chocolate Hazelnut Cake
1/3 cup (35g) cocoa powder
1/3 cup (80ml) hot water
150g dark chocolate, melted
150g unsalted butter, melted
1 1/3 cups, 275g firmly packed brown sugar
1 cup, 110g hazelnut meal
4 eggs, separated
1. Preheat oven to moderate (180°C). Grease a deep 20cm round cake pan; line base and side with baking powder.
2. Combine cocoa and the water in large bowl and stir until smooth. Add chocolate, butter, sugar and hazelnut meal. Stir mixture until combined. Add egg yolks, one at a time, stirring well after each addition.
3. Beat egg whites in small bowl with electric mixer until soft peaks form. Fold, in two batches, into chocolate mixture.
4. Pour mixture into prepared pan. Bake in moderate oven for about 1 1/4 hours. Let cool in pan. Serve with berries and thickened cream, and dusted with sifted cocoa powder, if desired.
