Chocolate Coconut Slice
1 1/2 cups plain flour sifted
1 cup white sugar
1/3 cup cocoa powder sifted
250 g butter melted and cooled
1 teaspoon vanilla essence
1 3/4 cup desiccated coconut
Preheat oven to 180.
Line a square dish with baking paper.
Combine flour sugar cocoa butter vanilla and 1 1/2 cups of coconut in a large mixing bowl. Mix well.
Press evenly over base of tray. Bake 15 – 20 mins or until skewer comes clean.
Allow to cool completely.
Icing:
Sift 2 cups pure icing sugar and 1/3 cup cocoa into a bowl.
Add 60 grams of melted butter and 2 tablespoons of hot water.
Stir until smooth, adding more water if necessary.
Spread evenly over cooled slice and sprinkle with remaining coconut.
Cut into squares when icing set.
