Fudge Chocolate Chip Cookies
125g unsalted butter, softened
1/2 cup brown sugar, loosely packed
1/4 cup sugar
1 egg
1 teaspoon vanilla essence
1 1/4 cups plain flour
1/2 teaspoon bicarbonate of soda
1/4 teaspoon salt
1 cup chocolate chips
1/4 cup roughly chopped pecans
1. In a large bowl, cream together the butter and both sugars with an electric mixer until the mixture is light and smooth. Add the egg and vanilla and continue to beat them until they are smooth.
2. In a bowl, sift the plain flour, bicarbonate of soda and salt together. Add the flour mixture to the already beated ingredients and lightly beat until they are all just lightly blended. Lightly fold in the chocolate chips and the roughly chopped pecans.
3. Drop about 1 1/2 tablespoons of dough onto lightly greased baking trays, spacing them about 5cm apart. Bake in preheated moderate oven 180C for 9-12 minutes or until they are looking golden around the edges (they will not set at this stage).
4. Cool the cookies on the baking trays for 5 minutes, then transfer the cookies to a wire rack for them to cool completely.
Store them in an airtight container. This quantity will make about 18 biscuits.
