Steaks with Mushroom Sauce
Marinade:
1 Tbsp olive oil
1 Tbsp lemon juice
2 garlic cloves, crushed
6 rib eye steaks
sea salt and fresh ground pepper
Sauce:
30g unsalted butter
500g button mushrooms, sliced
1/2 cup beef stock
1/4 cup chopped parsley
1/2 cup red-fat thick cream
Combine all marinade ingredients in large bowl. Add steaks and toss gently to coat. Cover and marinate in fridge for at least 3 hours. Preheat grill plate to med-high and cook steaks to your liking. Cover and rest whilst making sauce.
Sauce:
Melt butter in small frypan over med-low heat. Add mushrooms and cook 5 mins or till soft. Add beef stock, parsley and cream, then season with salt and pepper. Simmer 5-6 mins until sauce thickens slightly. Serve over steaks.
