Grilled Mushroom and Goat’s Cheese Salad
Serves 4
1/2 cup olive oil
2 garlic cloves, thinly sliced
8 small flat mushrooms, stalks trimmed
120g mixed salad leaves
2 small cos lettuce or others
75g croutons
150g goat’s cheese (or feta), crumbled
2 lemons, juiced
1/2 cup walnuts, toasted, roughly chopped
salt and pepper
Combine 1/4 cup oil and garlic in jug, brush mushrooms with oil mix. Grill or barbeque mushrooms for a few minutes on each side. Transfer to a plate and let it cool. Arrange salad and lettuce leaves on a platter, top with mushrooms, croutons and cheese. Mix well other 1/4 cup oil, lemon juice, salt and pepper, walnut and drizzle over salad.
