Mushroom Omelettes
Makes 12
175g bacon, rind removed, chopped
1 tablespoon olive oil
250g mushrooms, sliced
1 cup grated tasty cheese
8 eggs
2/3 cup milk
1. Preheat oven to 200°C. Lightly grease a 12 x 1/3-cup capacity muffin pan.
2. Place bacon into a non-stick frying pan over medium-high heat. Cook, stirring, for 5 minutes, or until cooked. Remove to a bowl. Add oil and mushrooms to frying pan. Cook, stirring often, for 5 minutes, or until tender. Add to bacon. Cool for 5 minutes.
3. Divide mushroom mixture and grated cheese between muffin holes.
4. Whisk eggs, milk, and salt and pepper in a jug. Pour egg mixture over mushroom and cheese mixture. Bake for 18 minutes, or until puffed and golden. Serve warm.
