Coffee Liqueur
1 cup sugar
1 Tbsp instant coffee powder
1 cup water
2 tsp vanilla
1 cup brandy
1.5 Tbsp rum
Combine sugar, coffee and water in pan, stir over heat until sugar is dissolved. Bring to boil, reduce heat, simmer uncovered for 3 minutes. Remove from heat, cool to lukewarm, add vanilla, brand and rum. Pour into sterilised bottle or jar, seal, store in cool dark place for 2 weeks.
Makes about 2 cups
