Ginger Beer
140g ginger, grated
3 lemons, juiced,
1L sparkling mineral water
4 Tbsp muscovado sugar
Sprinkle grated ginger with the sugar, add the rind of two lemons. Bash in a pestle and mortar or with a rolling pin, add most of the lemon juice, and the water. Allow to sit for ten minutes, then taste. Add more lemon or sugar if needed. Sieve, and serve with ice and fresh mint.
