Mango and Coconut Lassi
Serving size: Serves 2
1 cup Australian low fat natural yoghurt, well chilled
1 cup Australian low fat milk, well chilled
2 Tablespoons caster sugar
3/4 cup chopped fresh or canned mango
1-2 drops coconut essence
Combine all ingredients in a blender and process until smooth. Pour into chilled glasses and serve immediately.
You can substitute the mango and coconut for:
100g frozen raspberries and 1-2 drops of rosewater
100g mixed berries
Substitute mango for banana
