Barbecued Pork Spare Ribs
1 kg pork spare ribs
4 Tablespoons barbecue sauce
4 Tablespoons honey
4 Tablespoons brown vinegar
1 Tablespoon chilli sauce
1/4 teaspoon five spice powder
1/3 cup sherry
2 Tablespoons soy sauce
1 clove garlic, crushed
2.5cm (1″) piece ginger, grated
1. Put spare ribs in large saucepan of water. Bring to boil, reduce heat, simmer covered 20 mins, this helps to remove excess fat.
2. Combine the BBQ sauce, honey, vinegar, chilli sauce, five spice powder, sherry, soy sauce, garlic and ginger. Mix well. Put pork spare ribs into baking dish, pour sauce over, leave to stand one hour; turn occasionally.
3. Bake in a moderately hot oven for 60 mins, or until pork is tender, baste frequently.
