Mustard Lime Dressing
1 teaspoon mixed French or German style mustard
1 clove garlic, crushed
1 and 1/2 tablespoons fresh lime juice
3 Tablespoons extra virgin olive oil (you can use vegetable oil)
Freshly ground black pepper to taste
1 teaspoon sugar (optional, but it does make it sweeter)
Mix the mustard and crushed garlic in a small jug or bow. Gradually add the lime juice, then whisk in the olive oil. Add a little more olive oil if you like. Season with pepper to taste. Stir well or shake in a small jar (like a peanut butter jar, which you can make the whole thing in) before serving.
Store in the refrigerator and use within a few days. It is quick and easy, and goes best with green salads.
