Minestrone Soup
1 onion
1 carrot
1 potato
1 stick celery
1 1/2 litres water
beef stock to taste
1 can tomatoes
1 tin red kidney beans, drained and washed
dried mixed herbs
pasta noodles
Peel and chop the onion, carrot, potato and celery. Place all the chopped vegies in a large pan. Add the water, beef stock, beans and herbs. Chop tomatoes and add to the soup, with all the juices. Cook gently until vegies are soft, approx 1 – 2 hours. Add the pasta noodles and continue to cook until they are soft.
