Chilli Con Carne
500g minced beef
1/2 tin kidney beans
1/2 tub (70g) tomato paste
1-2 cups of beef stock
1/2 tin diced tomatoes
1 tsp paprika
1 tsp ground coriander
2 tsp cumin
2 tsp sugar
1/2 tsp hot chilli flakes
Pinch of Salt
Sprinkle of Pepper
1 large garlic clove chopped
1/2 red capsicum diced
1 medium onion diced
Olive oil
Fry mince; set aside. In pan add garlic, capsicum and onion, fry for a few minutes. Add all spices and fry to release flavours. Place minced meat back into the frypan plus sugar; add diced tomatoes and tomato paste and beef stock. Simmer for 30 minutes. Add kidney beans and simmer for a further 30 mins. Serve with steamed rice.
