Peach and Cinnamon Muffins
1 1/2 cups plain, wholemeal flour
2/3 cup rolled oats
1/2 tsp nutmeg
1/4 tsp cinnamon
1 1/2 tbsp brown sugar
1/2 cup unsweetened pie peaches
1 cup buttermilk
1 small egg, beaten
2 tsp canola oil
1. Place flour, oats, nutmeg, cinnamon and brown sugar in a mixing bowl.
2. Stir in peaches.
3. Mix buttermilk, egg and oil together in a separate bowl, then stir into peach mixture with a few swift strokes.
4. Spoon into lightly greased muffin tins and bake in a moderate oven 180°C (350°F) for 30-40 minutes.
5. Serve warm.
