Choc Chip Cookies
2 1/2 cups plain flour
250g unsalted butter, softened
1 1/4 cups caster sugar
1 egg lightly beaten
2 teaspoons vanilla essence
250g of mixed choc bits
1. Preheat oven to 180 C. Line 2 baking trays with baking paper; sift flour and set aside. Cream the butter and sugar in a bowl until light and creamy.
2. Add egg and vanilla beating well; fold into flour mixing to a dough add the choc bits and mix well until combined.
3. Divide the mixture half and shape heaped tablespoons of mixture into balls and flatten. Place onto prepared trays and bake for 15 to 18 minutes. Cool on a rack and repeat process with the other half of mixture.
Makes approx 24 cookies
