Chicken Veronica
1kg chicken pieces
30g butter
1 Tbsp plain flour
1 cup water
1 tsp or 1 cube chicken stock
1/4 cup of sherry or brandy
1/2 – 1 cup of cream
1. Heat butter in pan.
2. Add chicken, cook until golden brown.
3. Stir together water, flour, chicken stock, water and sherry/brandy.
4. Add to chicken, stir through and simmer for 30 mins.
5. Season with salt and pepper.
6. Add cream and heat but do not boil.
