Lettuce Cake with Lemon Frosting
1 cup lettuce, finely chopped
1 1/2 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/8 tsp mace
1/8 tsp ginger
1 cup sugar
1/2 cup corn oil
1 1/2 tsp lemon peel, grated
2 eggs
1/2 cup walnuts, chopped
Sift all dry ingredients except sugar. Combine sugar, lemon rind and oil. Mix in flour mixture and chopped lettuce. Add eggs, one at a time, beating well after each one. Stir in walnuts and pour into a 9 inch x 13 inch baking dish. Bake at 350 degrees F for 25-30 minutes, or is golden brown and tests clean.
Frosting:
1 1/2 cups powdered sugar
1/4 tsp lemon extract
1/2 tsp grated lemon peel
2-3 Tbsp milk
1 Tbsp butter, softened
Sift powdered sugar and combine with other frosting ingredients. Beat till smooth and put on cooled cake.
