Orange Cake
250g softened butter
Rind of 1 large orange
250g caster sugar
4 x 60g eggs
250g self-raising flour
1 pinch of salt
Juice of 1 large orange
Grease and lightly flour a large loaf tin and line the base with greased paper. Cream the butter with the orange rind until very smooth. Gradually add the sugar, beating well in between each addition until it is thoroughly incorporated and the mixture is light and fluffy. Beat the eggs until blended and gradually pour into the butter and sugar mixture beating thoroughly to prevent the eggs from curdling the mixture. Sift the flour with the salt. Using a metal spoon fold in the flour alternatively with the orange juice. Turn the mixture into the prepared tin and bake at 170’c for 45 minutes or until the cake is cooked when tested. Remove from the tin and cool on a cake rack.
Orange Icing:
Mix 30g butter, 1 Tbsp grated orange rind, 1 Tbsp orange juice, 2 cups sifted icing sugar.
