Muddy Chocolate Cakes
150 grams cooking chocolate
185g butter, chopped
1 and 1/3 cups brown sugar
1/3 cup Self-Raising flour, sifted
1/2 cup plain flour, sifted
1/4 cup baking cocoa, sifted
3 eggs
1. Preheat oven to 160’C. Place chocolate and butter in a saucepan over low heat, stir until melted and smooth. Set aside to cool slightly.
2. Place sugar, flour and cocoa in a bowl, then fold in eggs and chocolate mixture until just combined.
3. Line the bases and grease the sides of 6×1 cup capacity muffin tins and pour in the mixture.
4. Bake for 40 minutes or until cooked, test with skewer. Spread the cooled cakes with rich chocolate glaze and serve with ice-cream or thick cream.
Chocolate Glaze:
200g cooking chocolate
1/2 cup cream
Place the chocolate and cream in a small saucepan over low heat. Stir until melted and combined. Allow to cool and then spread on cakes.
Is the quantity for plain flour and cocoa cups, I assume so. but unsure for qty of cream in glaze. Fabulous site.
Thanks for spotting that – have corrected it but will need to make it again to be sure. Don’t know what ate the recipe but will look for my note book and see if I can find my copy.
