Banana Maple Muffins
1 1/2 cups self-raising flour
1/4 tsp bicarb of soda
1/2 cup caster sugar
1 tsp grated orange rind
1/2 cup chopped pecans
3/4 cup very ripe mashed banana
1 x 200 g tub sour cream
1 egg, lightly beaten
50 g butter, melted
1/4 cup maple syrup
Lightly grease a 12 hole muffin pan(1/3 cup capacity). Combine the wet ingredients in a large bowl. Stir in the nuts, sugar and grated rind until well mixed. Sift the flour and bicarb of soda into a separate bowl. Sprinkle flour mixture over the wet mixture and fold in til just combined. Do not over mix Spoon the mixture evenly into the prepared muffin tin. Bake at 190c approx 20mins. Stand for a couple of minutes before turning out on to a wire rack. Dust with sifted icing sugar and serve hot or cold.
